Roasted Winter Sweet Potato & Butternut Squash Tagine


This month, to help those participating in Veganuary, we’ll be celebrating our favourite Vegan food across our 32 Hotels & Inns across the UK. For us, Veganuary is about promoting the fantastic power of vegetables, promoting healthier choices, and showcasing the incredible flavours you can create in entirely plant-powered meals. 

We have a wide range of menus across our Inns, and there’s plenty of Vegan food options to choose from.  From light bites to grazers and sharers and even hearty burgers, there’s something for everyone. 

This month, we’re taking a trip to The White Hart Boston, and trying their Roasted Butternut Squash & Sweet Potato Tagine which is served with couscous & pomegranate molasses. 

This dish is the perfect Winter warmer and is a favourite of Head Chef, Scott Parker.  

With earthy flavours, and a complex mix of herbs and spices, this dish transports you from chilly Lincolnshire to North Africa!
